It’s now only a matter of weeks until the bistro space at 388 Brunswick Street currently occupied by The Coop makes way for a much-anticipated, 100% plant based takeover by the Gold Coast’s cult vegan brand, I Like Ramen.
Once the doors to The Coop shut at the close of service on Saturday, October 20, work will commence on transforming the current space with an identity facelift, featuring a range of large scale, irreverent art pieces synonymous with the I Like Ramen brand.
The team have revealed an expanded offering for their Brisbane menu that includes panko-crumbed mushroom & kimchi Bao, Agedashi Tofu in shiitake dashi, Asian greens in ginger and garlic dressing, alongside existing favourites like kimchi potatoes and Po’ Boys. Famed Ramen bowls like Chick’n with white miso and the Mean Green with spinach ramen noodles will also be joined by a brand new bowl featuring charcoal-activated noodles.
The familiar faces of The Coop will remain, with The Flying Cock manning the bar and front-of-house operations, as well as most of The Coop’s kitchen team staying on to make the transition away from fried chicken with great enthusiasm.
Meanwhile, The Coop’s reign enters its penultimate week, with a last hurrah serving up its highly-popular daily deals.
Parmageddon: The final 2-4-1 Parmy Nights: Wednesday, October 3, 10, 17.
Goodbye To Bueno Bueno ($3 Tacos): Thursday, October 11 & 18.
One Last Nugg Club ($20 All You Can Eat Nuggets, Fries & Slaw): Saturday, October 20.
An official launch date for I Like Ramen’s first Brisbane location is slated for Thursday, October 25. Once open to the public, I Like Ramen Brisbane will then commence trading for dinner on Wednesdays and Thursdays, then opening lunch and dinner each Friday and Saturday.
